A quick and easy Kerala-lite delicacy which is an integral part of Onam festivities. This version is made with carrots.
Ingredients Of Carrot Payasam
- 3 carrots
- 1-litre milk
- 2 cups sugar
- 2 tsp ghee(clarified butter)
- 1/4 cup raisins and cashews
How to Make Carrot Payasam
- Peel, chop and steam carrots in pressure cooker
- Grind the steamed carrots into a fine paste
- Heat 1/2 tsp of ghee in a heavy-bottomed vessel
- Add the ground carrot and fry for 3-4 minutes on medium heat
- Add the milk and allow it to boil.
- Then keep stirring till it gets reduced to half the quantity
- Add sugar and cook further till sugar is completely dissolved
- Switch off the stove
- In another pan, heat the remaining ghee and fry the raisins and cashew nuts
- Garnish the payasam with the fried dry fruits
- Serve hot or cold, as desired
