An easy Kerala-lite delicacy version made with carrots

A quick and easy Kerala-lite delicacy which is an integral part of Onam festivities. This version is made with carrots.

Ingredients Of Carrot Payasam

  • 3 carrots
  • 1-litre milk
  • 2 cups sugar
  • 2 tsp ghee(clarified butter)
  • 1/4 cup raisins and cashews

How to Make Carrot Payasam

  • Peel, chop and steam carrots in pressure cooker
  • Grind the steamed carrots into a fine paste
  • Heat 1/2 tsp of ghee in a heavy-bottomed vessel
  • Add the ground carrot and fry for 3-4 minutes on medium heat
  • Add the milk and allow it to boil.
  • Then keep stirring till it gets reduced to half the quantity
  • Add sugar and cook further till sugar is completely dissolved
  •  Switch off the stove
  • In another pan, heat the remaining ghee and fry the raisins and cashew nuts
  • Garnish the payasam with the fried dry fruits
  • Serve hot or cold, as desired
