Ramadan 2018 Iftar Recipe : Cabbage Dolma

INGREDIENTS
100g boiled cabbage leaves
100g minced beef
40g Egyptian rice
25g tomato paste
15g pepper paste
8g dill
10g parsley
8g dry mint
30g tomato
5g garlic
2tsp olive oil
For the sauce:
2tsp olive oil
150g chopped tomato
5g tomato paste
15g pepper paste
2g sugar
Salt and pepper to taste
To decorate:
1 sprig of dill
25g labneh
METHOD
1. Add minced beef into mixing bowl, rinse white rice and add to minced beef, salt and black pepper.
2. Crush some garlic cloves, mince them finely and add to the bowl, you can also add a table spoon of tomato paste or like we did chopped finely tomatoes.
3. Add red pepper paste, chopped dill, parsley, dry mint and olive oil.
4. Mix all these well, to make the filling to stuff your cabbage leaves.
5. Take a cabbage leave, cut in half and take out the hard white stem. Then fill it with your filling and start rolling and baking in the oven for 20 min at 180C.
6. While your cabbage dolmas are baking, mix olive oil, garlic, chopped tomatoes, pepper paste, sugar and salt in a frying pan.
7. Once your cabbages are cooked served them with this sauce.
8. Add Labneh and fresh dill for decoration.
