Mango sticky rice is a popular Thai dessert known for its sweet and creamy taste. Here’s a simple recipe:
Ingredients:
– 1 cup of glutinous rice
– 1 1/2 cups of coconut milk
– 1/2 cup of sugar
– A pinch of salt
– 2 ripe mangoes, peeled and sliced
– Sesame seeds or mung beans (optional, for garnish)
Instructions:
1. Prepare the Rice:
– Wash the glutinous rice until the water runs clear.
– Soak the rice in water for at least 30 minutes, but preferably for a few hours or overnight.
2. Steam the Rice:
– Drain the soaked rice and place it in a steamer lined with cheesecloth or a banana leaf.
– Steam the rice over boiling water for about 25-30 minutes, or until it becomes tender and translucent.
3. Prepare the Coconut Sauce:
– While the rice is steaming, heat the coconut milk, sugar, and a pinch of salt in a saucepan over medium heat.
– Stir the mixture until the sugar dissolves, but do not let it boil. Once it’s well combined, remove it from the heat.
4. Combine Rice and Sauce:
– Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Gently mix until the rice is well coated.
5. Serve:
– Serve the sweet mango slices alongside the coconut sticky rice.
– Drizzle the remaining coconut sauce over the rice and mango slices.
– Garnish with sesame seeds or mung beans if desired.
