Ingredients:
1 cup barley rice
1/2 cup urad dal (split black gram)
1/2 cup idli rice
1/2 cup poha (flattened rice)
Salt to taste
Water for soaking and grinding
1/4 teaspoon baking soda (optional)
Instructions:
1. Rinse the barley rice, urad dal, idli rice, and poha separately under cold water.
2. Soak the barley rice, urad dal, and idli rice in enough water for 4-6 hours. Soak the poha in just enough water for 30 minutes before grinding.
3. After soaking, drain the water from each and grind them separately to a smooth paste using a little water. Grind urad dal to a fluffy consistency.
4. Mix the ground barley rice, urad dal, idli rice, and poha together in a large bowl. Add salt and mix well. Allow the batter to ferment overnight or for about 8 hours.
5. After fermentation, the batter should have risen, indicating it’s ready for making idlis. If you want to make the idlis immediately, you can add baking soda to the batter and mix well.
6. Grease the idli plates with a little oil. Pour the batter into the idli moulds.
7. Steam the idlis in a steamer for about 10-15 minutes or until a toothpick inserted into the idli comes out clean.
8. Once done, let the idlis cool for a few minutes before removing them from the moulds.
Your healthy and delicious barley idlis are ready to be served! Enjoy them with your favorite chutney and sambar.
