Here’s a simple recipe for Oats Uttappam:
Ingredients:
1. 1 cup rolled oats
2. 1/2 cup semolina (sooji)
3. 1 cup yogurt
4. 1/2 cup water (adjust as needed)
5. 1/2 cup finely chopped onions
6. 1/2 cup finely chopped tomatoes
7. 1/4 cup finely chopped bell peppers (capsicum)
8. 1/4 cup finely chopped carrots
9. 2 tablespoons finely chopped coriander leaves
10. 1-2 green chilies, finely chopped (adjust to taste)
11. 1/2 teaspoon grated ginger
12. Salt to taste
13. 1/2 teaspoon baking soda
14. Oil or ghee for cooking
Instructions:
1. In a blender, grind the rolled oats into a fine powder.
2. In a mixing bowl, combine the ground oats, semolina, yogurt, and water. Mix well to form a smooth batter. Let it rest for 15-20 minutes.
3. Add salt, baking soda, and adjust the consistency with more water if needed.
4. Heat a non-stick griddle or dosa pan over medium heat. Grease it lightly with oil.
5. Pour a ladleful of batter onto the center of the griddle and spread it into a circular shape to form a thick pancake.
6. Quickly sprinkle a portion of chopped onions, tomatoes, bell peppers, carrots, green chilies, and coriander leaves on the uttapam.
7. Drizzle a little oil or ghee around the edges.
8. Cook the uttapam on medium heat until the edges start to brown. Flip it and cook the other side until it’s fully cooked and has a golden color.
9. Repeat the process with the remaining batter.
10. Serve the oats uttapam hot with coconut chutney or any chutney of your choice.
