Here’s a recipe for Drumstick Mango Curry:

Ingredients:

1. 2 cups drumstick pieces (cut into 2-inch lengths)
2. 1 cup raw mango, peeled and diced
3. 1 onion, finely chopped
4. 1 tomato, chopped
5. 2 green chilies, slit
6. 1/2 cup grated coconut
7. 1 teaspoon mustard seeds
8. 1 teaspoon cumin seeds
9. 1/2 teaspoon turmeric powder
10. 1 teaspoon red chili powder (adjust to taste)
11. 1/2 teaspoon fenugreek seeds
12. A pinch of asafoetida (hing)
13. 1 sprig curry leaves
14. 2 tablespoons oil
15. Salt to taste
16. Water as needed

Instructions:

1. In a blender, grind the grated coconut, mustard seeds, cumin seeds, turmeric powder, red chili powder, and fenugreek seeds to a smooth paste by adding a little water.

2. Heat oil in a pan or kadai. Add mustard seeds, cumin seeds, asafoetida, and curry leaves. Let them splutter.

3. Add chopped onions and sauté until they turn translucent.

4. Add chopped tomatoes and cook until they become soft and the oil starts separating.

5. Now, add the drumstick pieces and diced raw mango. Mix well.

6. Pour the ground coconut paste over the vegetables. Add salt and mix everything.

7. Add enough water to achieve the desired curry consistency. Cover and let it simmer until the drumsticks are cooked and the flavors are well combined.

8. Once the curry is cooked, adjust the seasoning and spice levels according to your taste.

9. Serve the Drumstick Mango Curry hot with steamed rice or any Indian bread of your choice.
