Ingredients:
– 2 lbs (about 1 kg) fresh lychees
– 3 lbs (about 1.5 kg) sugar
– 1 gallon (3.8 liters) water
– 1 package wine yeast

Instructions:

1. Prepare the Lychees:
– Peel and pit the lychees. Chop them into smaller pieces.

2. Make the Lychee Must:
– Place the chopped lychees in a large fermentation vessel.
– Boil the water and dissolve the sugar in it. Allow it to cool.
– Pour the cooled sugar water over the lychees in the fermentation vessel to create the must.

3. Pitch Yeast:
– Once the must has cooled to room temperature, sprinkle the wine yeast over the surface.

4. Fermentation:
– Cover the fermentation vessel with an airlock to allow gases to escape while preventing contaminants from entering.
– Let the mixture ferment for about 1-2 weeks or until the bubbling in the airlock slows down.

5. Rack the Wine:
– Siphon the liquid (now wine) into a clean vessel, leaving sediment behind.

6. Aging:
– Let the lychee wine age in a cool, dark place for at least a few months. The longer, the better.

7. Bottle the Wine:
– Once the wine is clear and stable, you can bottle it. Make sure to leave sediment behind during bottling.

8. Enjoy:
– Allow the bottled wine to age further, or you can enjoy it at this stage.
