Ingredients:
– 1 cup Semolina (Rava)
– 1 cup Freshly Grated Coconut
– 1 cup Powdered Sugar
– 1/2 cup Ghee (clarified butter)
– 1/4 cup All-Purpose Flour (Maida)
– 1/4 teaspoon Baking Powder
– 1/4 teaspoon Cardamom Powder
– A pinch of Salt
– Cashews or Almonds for garnish (optional)
Instructions:
1. In a pan, roast the semolina (rava) on low heat until it becomes fragrant. Make sure not to brown it; it should remain white.
2. In a mixing bowl, combine the roasted semolina, freshly grated coconut, powdered sugar, ghee, all-purpose flour, baking powder, cardamom powder, and a pinch of salt.
3. Mix everything well to form a soft dough. If the dough is too dry, you can add a little more ghee.
4. Preheat your oven to 180°C (350°F).
5. Take small portions of the dough and shape them into small balls (bolinhas). Place them on a baking sheet lined with parchment paper.
6. If desired, press a cashew or almond on top of each bolinha.
7. Bake in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
8. Remove from the oven and let the bolinhas cool on the baking sheet for a few minutes.
9. Transfer the bolinhas to a wire rack to cool completely.
10. Once cooled, store them in an airtight container.
