Thai Prawns Curry
Ingredients
- Prawns – 10 medium
- Sunflower oil-1 tbsp
- Shallot/Onion- 1
- Thai green curry paste- 1-2 tbsp
- Coconut milk- 125ml
- Soy sauce- 1 Tsp
- Lemon juice-1 Tsp
- Capsicum- 1 diced
- Baby corns- 3 diagonally cut
- Salt- a pinch
- Sugar- a pinch
Method
Heat the oil in a wok or large saucepan. Add the Thai curry paste and sauté. Add shallots, capsicum and baby corns and stir-fry for a minute. Here add the prawns and salt, sauté for a minute. Add half cup hot water and cover and cook for about 10 minutes. Uncover and add coconut milk and bubble for 2 minutes.
Add a pinch of sugar too. Finally, Add soy sauce and lemon juice and Stir well.
Food Note:- The same ingredients’ can be used for strips of chicken and any fish piece to make Thai green curry.
