RUCHI: Easy and Tasty Thai Prawns Curry

Thai Prawns Curry

Ingredients

  • Prawns – 10 medium
  • Sunflower oil-1 tbsp
  • Shallot/Onion- 1
  • Thai green curry paste- 1-2 tbsp
  • Coconut milk- 125ml
  • Soy sauce- 1 Tsp
  • Lemon juice-1 Tsp
  • Capsicum- 1 diced
  • Baby corns- 3 diagonally cut
  • Salt- a pinch
  • Sugar- a pinch

Method

Heat the oil in a wok or large saucepan. Add the Thai curry paste and sauté. Add shallots, capsicum and baby corns and stir-fry for a minute. Here add the prawns and salt, sauté for a minute. Add half cup hot water and cover and cook for about 10 minutes. Uncover and add coconut milk and bubble for 2 minutes.

Add a pinch of sugar too. Finally, Add soy sauce and lemon juice and Stir well.

Food Note:- The same ingredients’ can be used for strips of chicken and any fish piece to make Thai green curry.
