Chettinad chicken dum biryani is a world-famous dish and is very popular due to its unique taste & flavor. There is nothing more special than homemade dum biryani for weekend lunch or dinner.
Ingredients
- To Marinate
- Chicken – 1/2 kg
- Yoghurt – 2 tbsp
- Turmeric pwd – 1/4 tsp
- red chilli pwd – 1/2 tsp
- Ginger garlic paste – 1 tsp
- Coriander pwd – 1/2 tsp
- Mint & coriander leaves – handful
- Salt – 1/2 tsp
- Lemon juice – few drops
2. To Cook Basmati Rice
- Basmati rice – 2 cups
- Cumin seeds – 1/2 tsp
- Pepper corns – 1/2 tsp
- Turmeric pwd – 1/4 tsp
- Garam masala pwd – 1/2 tsp
- Salt – 1/2 tsp
3. To Make Chicken Gravy
- Oil – 1 tbsp
- Cumin seeds – 1/2 tsp
- Marathi moggu – 1
- Cloves – 4
- Cinnamon – 1
- Cardamom – 1
- Onion – 3
- Tomato – 1 big
- Ginger garlic paste – 1 tsp
- Yoghurt – 1 tbsp
- Mint & coriander leaves – handful
- Turmeric pwd – 1/4 tsp
- Red chilli pwd – 1/2 tsp
- Green chilli – 2
- Garam masala pwd – 1/2 tsp
- Lemon juice – few drops
- Salt to taste
4. To Make Biryani
- Oil -2 tsp
- Ghee – 2 tsp
- Fried onions – 2 tbsp
- Mint & coriander leaves
Method
- To Marinate
- Clean and wash chicken. Drain water from it thoroughly.
- Add yoghurt, turmeric pwd, red chilli pwd, ginger garlic paste, salt, coriander pwd, mint & coriander leaves and lemon juice.
- Coat the chicken completely with masala.
- Let it marinate for 30 mins.
To Cook Basmati Rice
- Wash and soak basmati rice in water for 5 mins.
- Heat 5 cups of water in thick bottomed vessel.
- Add cumin seeds, salt, pepper corns, turmeric pwd and garam masala pwd.
- Stir well and allow the water to boil.
- Now add the soaked and drained basmati rice.
- Cook until the basmati rice is 3/4 th cooked.
- Turn off flame.
- Drain the water and keep the basmati rice aside as shown in video.
To Make Chicken Gravy
- Heat 1 tbsp of oil in thick bottomed vessel.
- Add bay leaf, marathi moggu, cumin seeds, cardamom, cloves, pepper corns and cinnamon.
- Wait to splutter.
- Add sliced onions and saute until transculent.
- Add salt, green chilli, ginger garlic paste and saute for 2 minutes.
- Add sliced tomato and cook until oil separates.
- Add finely chopped fresh mint and coriander leaves and toss.
- Add yoghurt and combine.
- Add red chilli pwd, garam masala pwd and combine.
- Add marinated chicken and combine.
- Cover & cook for 10 mins or until the chicken is done.
- Add few drops of lemon juice and turn off flame.
- Delicious chicken gravy is ready to be added for dum biryani.
To Cook Biryani:
- In a wide bottomed thick pan, heat 2 tsp of oil.
- Add little chicken masala and spread well.
- Its time to add half of the cooked basmati rice and spread on top of chicken masala.
- Sprinkle some fried onions on top.
- Also some fresh mint & coriander leaves.
- Drizzle little ghee on it.
- Add the remaining chicken masala and spread.
- Layer it with remaining basmati rice and spread well.
- Sprinkle some more fried onions and mint, coriander leaves.
- Add a tsp of ghee for flavor.
- Also, you can drizzle some saffron soaked milk for colourful appearance of the biryani.
- Now close with lid and cook in low flame for 10 mins.
- Turn off flame. Fluff the biryani gently.
- Flavorful delicious homemade chicken dum biryani is ready.
- Enjoy hot with raitha or any curry of your choice.
