Carrot Kheer is one of the most popular and delicious Indian dessert recipe made with carrot, milk & sugar. This kheer has amazing flavours of cardamom, saffron and almond with all the goodness of fresh nutritious carrots. Kids love this chilled dessert as an after-school snack.
Ingredients
- Carrots – 3 to 4
- Badam / almonds – 10 to 12
- Whole milk – 2 & 1/2 cups
- Saffron strands – a few
- Cardamom pwd – 1/4 tsp
- Sugar – 3/4 cup
Method
- Wash and clean the carrots.
- Peel off the skin and slice to small pieces.
- Soak badam in warm water for 15 mins.
- Peel off the skin and keep ready.
- In a small cup, add 2 to 3 tbsp of milk.
- Add saffron strands and soak it.
- In a blender, add carrots, badam and 1/2 cup of milk.
- Grind to coarse paste.
- Add the remaining 1/2 cup of milk and blend well to smooth paste.
- Set it aside.
- Heat a sauce pan.
- Add 1 cup of whole milk (already boiled & cooled) and warm it.
- Add the carrot badam paste and stir gently in low flame.
- Adjust the consistency of the kheer by adding milk or water.
- Once the kheer starts boiling, turn off flame.
- Add saffron infused milk (step 6)
- Add cardamom pwd and sugar.
- Stir well.
- Transfer to serving cups.
- Delicious & healthy carrot kheer is ready to serve.
- Enjoy warm or chilled.
