Olan is a South Indian recipe originated in the state of Kerela. This recipe is a perfect dish to be served on the festival of Onam.

INGREDIENTS
- 1 cup thinly sliced watermelon
- 4 sliced green chili
- 3/4 cup Coconut milk
- 2 teaspoon coconut oil
- 1 cup thinly sliced pumpkin
- 3 tablespoon black-eyed beans
- 1/2 teaspoon salt

METHOD
- Cook the beans in a pressure cooker in enough water till tender, drain and keep aside.
- Steam the ash gourd, pumpkins, and green chilies, until they are soft.
- Mix in the cooked beans and salt to taste, add a little water, and when the mix starts to boil, add the coconut milk.
- Turn off the flame, heat the coconut oil in a pan, put some fenugreek seeds, whole red chilies, mustard seeds, and crushed curry leaves.
- When the mustard starts to sputter, turn the lot over the cooked – Olan, close with a lit and let flavors blend for 10 minutes.
