Adhirasam is a popular South Indian sweet that’s especially made during festivals and special occasions. Here’s a basic recipe to make Adhirasam:
Ingredients:
– 1 cup raw rice
– 1/4 cup jaggery
– 2-3 cardamom pods (for flavor)
– A pinch of dry ginger powder (optional)
– Ghee (clarified butter) for frying
Instructions:
1. Wash the raw rice and soak it in water for about 2 hours.
2. Drain the water from the soaked rice and let it dry for a little while. It should still be slightly damp.
3. Grind the damp rice into a fine powder. You can do this in a food processor or a grinding stone. Make sure the rice powder is fine in texture.
4. In a separate pan, melt the jaggery with a little water to form a syrup. Filter the jaggery syrup to remove any impurities.
5. Mix the rice powder, jaggery syrup, crushed cardamom pods, and dry ginger powder (if using) to form a dough. The dough should be firm and pliable.
6. Let the dough rest for a few hours or overnight to allow the flavors to meld.
7. Heat the ghee in a pan for deep frying.
8. Take a small portion of the dough and flatten it into a round, flat shape (similar to a small pancake).
9. Carefully slide the flattened dough into the hot ghee and fry it until it turns golden brown on both sides.
10. Remove the fried Adhirasam and place it on paper towels to remove excess ghee.
11. Repeat the process with the remaining dough.
12. Allow the Adhirasam to cool down completely before storing in an airtight container.
