Ingredients:
– 500g fresh clams (kakka irachi)
– 1 onion, finely chopped
– 2-3 green chilies, chopped
– 1 sprig curry leaves
– 1-inch piece of ginger, finely chopped
– 3-4 garlic cloves, minced
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1/2 teaspoon ground black pepper
– 2 tablespoons coconut oil (or any cooking oil)
– Salt to taste
– Fresh coriander leaves for garnish (optional)

Instructions:

1. Cleaning the Clams:
– Rinse the clams thoroughly in cold water to remove any sand or dirt.
– Place the clams in a bowl of water with some salt for about 30 minutes. This will help in releasing any sand or impurities from the clams.
– Drain and rinse the clams again before cooking.

2. Cooking the Clams:
– In a large pan or wok, heat the coconut oil over medium heat.
– Add the chopped onions and green chilies. Sauté until the onions turn translucent.

3. Adding Spices:
– Add the chopped ginger and garlic. Sauté for a couple of minutes until the raw smell disappears.

4. Seasoning:
– Stir in the turmeric powder, red chili powder, and ground black pepper. Mix well to combine the spices with the onion mixture.

5. Cooking Clams:
– Add the cleaned clams to the pan and mix them with the onion and spice mixture.
– Cover the pan and cook for about 10-15 minutes. The clams will release their own juices as they cook.
– Stir occasionally and ensure the clams are cooked until they become tender. Avoid overcooking as they can become rubbery.

6. Final Touch:
– Add the curry leaves and season with salt according to your taste.
– Cook for another 5 minutes until the flavors meld together and the clams are well-cooked.

7. Garnish and Serve:
– Remove from heat and garnish with fresh coriander leaves if desired.
– Serve your delicious Kakka Irachi Ularthiyathu with steamed rice or as a side dish with other South Indian dishes.
