Ingredients:
1. 4 cups ripe guava pulp (strained)
2. 2 cups sugar
3. 1/4 cup lemon juice
4. 1/4 cup ghee (clarified butter)
5. A pinch of salt
6. 1/2 teaspoon cardamom powder (optional)
7. Chopped nuts for garnish (optional)
Intructions:
1. Prepare Guava Pulp:
– Wash and peel the guavas. Remove seeds and chop them into small pieces.
– Blend the guava pieces to make a smooth pulp.
– Strain the pulp to remove seeds and fiber.
2. Cook Guava Pulp:
– In a heavy-bottomed pan, heat ghee over medium heat.
– Add the guava pulp, sugar, lemon juice, and a pinch of salt to the pan.
– Stir continuously to avoid sticking to the bottom.
3. Cooking Process:
– Cook the mixture on medium heat until it thickens and starts leaving the sides of the pan.
– Add cardamom powder if desired and mix well.
4. Setting the Guava Cheese:
– Once the mixture reaches a thick, jam-like consistency, pour it onto a greased plate or tray.
– Spread it evenly with a spatula and allow it to cool.
5. Cutting into Squares:
– Once cooled, cut the guava cheese into desired shapes, usually squares or diamonds.
– Garnish with chopped nuts if desired.
