Brinjal Beef Ularthiyathu Recipe
Ingredients:
– 500g beef, cut into small pieces
– 2 cups brinjal (eggplant), diced
– 1 large onion, finely sliced
– 2 tomatoes, chopped
– 2 green chilies, slit
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 tablespoon red chili powder
– 1 tablespoon coriander powder
– 1/2 teaspoon garam masala
– 1 teaspoon fennel seeds
– 4-5 curry leaves
– 2 tablespoons coconut oil
– Salt to taste
– Fresh coriander leaves for garnish
#### Instructions:
1. Heat coconut oil in a pan. Add fennel seeds and let them splutter.
2. Add sliced onions and sauté until golden brown.
3. Add ginger-garlic paste and green chilies. Sauté until the raw smell disappears.
4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
5. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and cook for 2-3 minutes.
6. Add the beef pieces and cook until they are browned on all sides.
7. Add diced brinjal and curry leaves. Mix well with the spices.
8. Cover the pan and let it cook on low heat until the beef is tender and the brinjal is cooked.
9. Adjust the salt according to taste.
10. Garnish with fresh coriander leaves.
11. Serve hot with rice or Indian bread.
