Ingredients:
1. Cooked rice
2. Fresh coconut, grated
3. Mustard seeds
4. Urad dal (black gram)
5. Chana dal (split chickpeas)
6. Curry leaves
7. Green chilies, chopped
8. Ginger, grated
9. Cashews
10. Ghee or oil
11. Salt to taste
Instructions:
1. Heat ghee or oil in a pan. Add mustard seeds and let them splutter.
2. Add urad dal and chana dal. Sauté until they turn golden brown.
3. Add cashews and fry until they become light golden.
4. Add curry leaves, chopped green chilies, and grated ginger. Sauté for a minute.
5. Add grated coconut and cook until it turns slightly golden.
6. Add the cooked rice and salt. Mix well to combine all the ingredients.
7. Cook for a few more minutes until the flavors blend.
8. Garnish with fresh coriander leaves (optional).
9. Serve hot and enjoy your coconut rice!
