Ingredients:
– 200g paneer (cottage cheese), cubed
– 2 large onions, finely chopped
– 2 large tomatoes, finely chopped
– 1 large bell pepper (capsicum), thinly sliced
– 2 green chilies, finely chopped
– 1 tablespoon ginger-garlic paste
– 1/2 cup tomato puree
– 1 teaspoon cumin seeds
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 1 tablespoon kasuri methi (dried fenugreek leaves)
– 2 tablespoons fresh cream
– 2 tablespoons oil
– Salt to taste
– Fresh coriander leaves for garnish
Instructions:
1. Heat oil in a kadai (wok) or a deep pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw aroma disappears.
4. Add finely chopped tomatoes and cook until they turn soft and the oil starts separating.
5. Add tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook the masala until the oil begins to release from the sides.
6. Add sliced bell peppers and cook for 2-3 minutes until they are slightly tender.
7. Add paneer cubes and mix well, ensuring the masala coats the paneer evenly.
8. Sprinkle garam masala and kasuri methi. Mix gently.
9. Pour fresh cream and stir to combine. Cook for an additional 2-3 minutes.
10. Garnish with fresh coriander leaves.
11. Serve hot with naan or roti.
