How to Make Quinoa Pancakes
- Combine all your dry ingredients in a large mixing bowl.
- In another bowl, add all your wet ingredients and make sure everything is properly mixed. Then add the wet ingredients to the dry, mix thoroughly and let stand. The batter should be a little thick.
- Meanwhile, add a little oil or butter to your pan or skillet and heat it. You can use butter for a more voluptuous tasting pancake or oil for a healthier one (my favorite is coconut oil; I use it for everything!). Turn down the heat.
- Pour a ladleful of the batter onto the pan and let it cook until you see little bubbles forming on the surface of the pancake, which is your sign to turn the pancake over and cook it for about two minutes on the other side.
- Serve with chopped fresh fruit, maple syrup, chocolate sauce or butter.
French Toast and Musk Melon Salad
A lovely breakfast option for egg lovers, it is delicious as well as nutritious. Sure, melons are great raw as snacks and make lovely desserts, but I like this summer fruit even better in savory, spicy salads and when combined with sweet French toast, it is irresistible.

For french toast:
2 eggs
2 tsp sugar

1 small cup milk
4 pieces bread
50 gm butter – 50gm

Frozen blueberries – to taste
For musk melon salad:
1 muskmelon
250 gm red and green grapes
Frozen strawberries – to taste
Mint leaves – to taste
50 gm walnuts
1 tsp pumpkin seeds
Honey – to drizzle
1 tsp olive oil
How to Make French Toast with Musk Melon Salad
For the French toast:
- Break the eggs into a bowl and whisk a little.
- Add 2 tsp of sugar, some vanilla essence and 1 small cup of milk. Whisk to make the egg wash.
- In a hot pan add some butter. Dip the pieces of bread in the egg wash and put them in the pan. Add some egg wash on top.
- Fry until the pieces of bread are golden brown.
- For the final plating put some berries and drizzle honey to garnish.
For the muskmelon salad:
- Take a muskmelon, cut in half.
- Scoop the muskmelon from the middle, after discarding the seeds put the pulp in a bowl.
- Half the red and green grapes and put them in a bowl. Put some frozen strawberries
- Add some mint leaves. Add chopped walnuts, pumpkin seeds. Drizzle some honey.
- Add 1 tsp of olive oil and mix.
- Serve in the muskmelon shell.
