Try this Easy and Tasty Tomato Rice: Recipe
This tomato rice is so easy to make and it makes a great dish to put in lunch box. You just need a simple onion raita to serve with it. When we were little mom used to make this and put a boiled egg or or this potato roast with this.

Cooking Time: 20 to 30 mins
Serves: 4
Ingredients:
- Rice – 2 cups ( I used seeraga sambar rice)
- Oil – 5 tblspn
- Cinnamon / Pattai – 1 stick
- Fennel Seeds / Sombu / Sanf – 1 tblspn
- Cardamom / Yelakai – 5
- Cloves / Krambu – 5
- Bay Leaf – 2
- Garlic – 10 cloves
- Onion – 1 large sliced thinly
- Tomatoes – 5 sliced thinly
- Green Chilli – 3 slit
- Chilli Powder – 1 tblspn
- Turmeric Powder / Manjal Podi – 1 tsp
- Garam Masala Powder – 1 tsp
- Curry Leaves a handful
- Salt to taste
- Sugar – 2 tsp
- Coriander Leaves a handful finely chopped
Method:
Start by cooking rice, i used seeraga sambar rice. Wash rice well and soak it for 30 mins. I took 4 cup of water for 2 cup of rice. I added it to pressure cooker, whistled it for 2 times, simmered the flame and cooked for 10 mins.
Turn off the heat and let the steam go all by itself. Open the cooker, fluff the rice and let it cool down completely. Heat oil in a kadai.
- Add in whole spices and let them sizzle.
- Add in garlic and saute till golden.
- Add in onions, green chillies and curry leaves. Saute till golden.
- Add in the spice powders, salt and sugar. Mix well.
- Add in tomatoes and cook till it turns mushy. Keep cooking them, at a stage the oil will separate from the mix.
- Now add in the cooked rice and mix well.
- Fry this for few mins.
- Add in coriander leave and Serve.
