Tomato Biryani is a quick & delicious medium spicy rice dish full of tempting flavour. In this recipe, the rice is cooked along with tomato puree and sauteed along with aromatic Indian spices. This dish adds a tasty twist from your regular rice dishes. It tastes yummy with tomato flavour infused with chilli, onions & garlic. Its very simple to cook and makes a hearty lunch box recipe.
Ingredients
- Basmati rice – 1 & 1/2 cup
- Oil – 2 tbsp
- Ghee – 1 tbsp
- Bay leaf – 1
- Gram dal – 1 tbsp
- Cumin – 1/2 tsp
- Cinnamon – 1
- Cardamom – 1
- Cloves – 4
- Green chilli – 2
- Red chilli – 2
- Garlic – 4
- Onion – 1
- Ginger garlic paste – 1 tbsp
- Tomato – 3
- Red chilli pwd – 1/2 tsp
- Turmeric pwd – 1/4 tsp
- Garam masala pwd – 1/2 tsp
- Fresh mint & coriander leaves
- Salt to taste
Method
- Wash & soak basmati rice in water for 5 mins.
- Drain water and set aside.
- Heat oil & ghee in pressure pan.
- Add bay leaf, gram dal, cumin, cinnamon, cardamom, cloves and saute.
- Allow to crackle.
- Add green chilli, garlic, sliced onions and saute.
- Add salt and saute until transculent.
- Add ginger garlic paste and saute.
- Add mashed tomato and cook until oil separates.
- Add red chilli, turmeric pwd, garam masala pwd and toss.
- Add finely sliced fresh mint and coriander leaves.
- Add basmati rice and toss in the masala.
- Add 2 & 1/2 cups of water and stir.
- Add a tsp of ghee and mix.
- Taste and adjust salt and seasonings.
- Cover and pressure cook for 1 whistle in high flame.
- Simmer the flame for 5 mins and turn off flame.
- Once the pressure goes off, fluff the biryani gently.
- Healthy delicious flavorful tomato biryani is ready.
- Serve hot with onion raitha.
