Indulge in the rich tradition of Deepavali with the delectable North Indian sweet, Badusha, also known as Balushahi. Renowned for its flaky texture and buttery taste, a well-crafted Badusha strikes the perfect balance of sweetness, ensuring it doesn’t overwhelm the palate even when immersed in sugar syrup. The ideal Badusha boasts a delightful crunch on the outside and a soft, enticing interior.

**Ingredients:**
– 1/4 cup ghee
– 1/4 cup curd
– 1 cup maida
– 1/4 tsp baking soda
– 1/4 cup pistachios or nuts of your choice
– Salt
– Oil

**For sugar syrup:**
– 1 tsp cardamom powder
– 1 cup sugar
– 1/4 cup water

**Preparation:**
1. Combine flour, salt, and baking soda in a bowl, creating a dry mix.
2. Introduce ghee to form a coarse mix with crumbs.
3. Incorporate yogurt, kneading until all ingredients blend.
4. Cover the dough and let it rest for 30 – 35 minutes.
5. Shape small balls from the dough, creating a dent in the center with your finger.
6. Allow the balls to rest for 15 minutes.
7. Heat oil and fry a few balls at a time until evenly golden on medium heat.
8. Prepare sugar syrup by boiling 1/4 cup water, adding a cup of sugar.
9. Once boiling, add cardamom powder and reduce the heat.
10. Simmer until the mixture reaches a single thread consistency.
11. Dip the fried dough in the syrup, ensuring even coating on all sides.
12. Serve garnished with nuts and savor the homemade delight!
