4 large eggs

1/4 lb. deli ham, chopped

DIRECTIONS
Preheat oven to 450° and line a large baking sheet with parchment paper.
Separate egg whites and egg yolks, placing the egg whites in a large bowl and the yolks in a small bowl.
Season the egg whites with salt and pepper. Using a whisk or a hand mixer, beat the egg whites until stiff peaks form. Gently fold in Parmesan, ham, and chives. Create 4 mounds of egg whites on the prepared baking sheet and indent the centers of each to look like nests. Bake until slightly golden, about 3 minutes.
Carefully add an egg yolk to the center of each egg white cloud. Season yolk with salt and pepper. Bake until the yolks are just set, about 3 minutes more.
Cauliflower Hash Browns

1/2 medium head cauliflower
1 large egg
1/2 c. finely chopped onion
1 c. shredded Cheddar
3 tbsp. cornstarch

DIRECTIONS
Grate cauliflower on a box grater until shredded. Transfer to a medium bowl and add egg, onion, cheddar, and cornstarch. Season with salt and pepper.
In a large skillet over medium-high heat, heat oil. Add spoonfuls of cauliflower mixture and shape into a patty. Cook until brown and crispy, 5 minutes, then flip and cook 5 minutes more. Repeat with remaining cauliflower mixture.
Donut Apples

12 oz. cream cheese, softened, cut into thirds
2 tsp. honey, divided

DIRECTIONS
Divide cream cheese among three small bowls. In one bowl, add 1 teaspoon honey. In another bowl, add melted chocolate. In the last bowl, add remaining teaspoon honey and pink food coloring. Stir each bowl together until combined.
Slice apples and use a biscuit or cookie cutter to hollow out centers.
Spread mixtures on apple slices and top with sprinkles.
Gluten-Free Banana Bread

INGREDIENTS
3 medium ripe bananas, plus more for garnish
2 c. old-fashioned rolled oats
2 large eggs
1/2 c. pure maple syrup
1 tsp. baking soda

1/2 c. chopped walnuts, toasted
DIRECTIONS
Preheat oven to 350° and line an 8″-x-5” pan with parchment paper.
Combine bananas, oats, eggs, maple syrup, baking soda, vanilla, and salt in a blender. Blend until you have a smooth batter, about 1 minute. Fold walnuts into the mixture.
Pour batter into prepared pan and arrange banana slices on top. Bake until a toothpick inserted into the middle of the bread comes out clean, about 20 minutes.
Let cool in pan for 15 minutes, then invert loaf onto a cooling rack to cool completely.
Low-Carb Breakfast Burritos

DIRECTIONS
In a small bowl, whisk together eggs, milk, and chives, and season with salt and pepper.
In a large nonstick skillet, melt butter. Once the pan is completely coated, add the egg mixture. Tilt pan back and forth to make sure it’s completely coated, then let cook, 2 minutes. Once you can move egg back and forth, carefully flip and cook 2 minutes more.
Transfer to a plate and top with bacon, black beans, avocado, cheddar, and salsa. Roll up into a burrito and serve.
