Ham Egg & Cheese Roll-Ups

10 eggs
2 tsp. garlic powder
kosher salt
Freshly ground black pepper
2 tbsp. butter
1 1/2 c. shredded Cheddar
1 c. baby spinach
1 c. chopped tomatoes
20 slices ham
DIRECTIONS
Heat broiler. In a large bowl, crack eggs. Whisk together with garlic powder and season with salt and pepper.
In a large nonstick skillet over medium heat, melt butter. Add eggs and scramble, stirring occasionally, 3 minutes. Stir in cheddar until melted, then stir in baby spinach and tomatoes until combined.
On a cutting board, place two slices of ham. Top with a big spoonful of scrambled eggs and roll up. Repeat with remaining ham and scrambled eggs.
Place roll-ups in a shallow baking dish and broil until ham is crispy, 5 minutes.

DIRECTIONS
Combine pineapple, banana and coconut milk in a blender and blend on high until smooth.
Pour into a large bowl. Arrange more pineapple, banana slices and coconut on top. Garnish with maraschino cherry, if desired.

3 c. whole milk
2 c. water
2 c. old fashioned oats
1/4 c. brown sugar

1 c. frozen blueberries
1/4 c. shredded coconut
DIRECTIONS
Butter the inside of your slow cooker.
Add all ingredients except blueberries and coconut. Cook, stirring occasionally, on high for 4 hours or on low for 8 hours.
In the last 10 minutes of cooking, turn the dial to warm and gently stir in the blueberries and coconut.
Serve topped with maple syrup

2 ripe avocados
Juice of 1 lime
1/2 tsp. kosher salt
1/2 c. cherry tomatoes, quartered
1/2 small red onion, minced
1/2 jalapeño, minced
1 clove garlic, minced
4 slices sourdough bread, toasted
1 tbsp. fresh cilantro, chopped
DIRECTIONS
In a bowl, mash together avocado with lime juice and kosher salt. Stir in tomatoes, onion, jalapeno, and garlic until combined.
Spread on slices of bread, then sprinkle with cilantro.
Avocado Egg-In-A-Hole

INGREDIENTS
1 avocado
4 slices of bread
4 tbsp. butter, divided
4 eggs
kosher salt
Freshly ground black pepper
1/2 c. shredded sharp Cheddar cheese
1 tbsp. Chopped chives
DIRECTIONS
Cut avocado in half and scoop out flesh as one big piece. Lay the avocado half on its side (the hole should be on its side) and cut in 3-4 large pieces, keeping the shape of the hole in each slice.
Cut a hole in the center of each slice of bread big enough to fit an avocado slice. Melt 2 tablespoons of butter in a large nonstick skillet over medium heat. Add 2 slices of bread to the skillet and toast on each side, about 2 minutes per side. Place avocado slices inside each slice of bread in the skillet. Crack an egg into the center of each circle. Season with salt and pepper. Cover skillet and cook until the egg is cooked to your desired doneness, about 3-5 minutes. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted. Repeat with remaining ingredients. Garnish with chives.
