Canadian Eggs Benny
What’s more Canadian than peameal bacon and maple, eh? Celebrate living in the Great White North with this twist on classic eggs Benedict.

Ingredients
Hollandaise Sauce:
1/2 cup (125 mL) butter
3 egg yolks
2 tbsp (30 mL) lemon juice
1 tsp (5 mL) Dijon mustard
Pinch each salt and pepper
Assembly:
4 slices white bread, toasted
2 tbsp (30 mL) Dijon mustard
4 tsp (20 mL) maple syrup
4 slices peameal bacon, cooked
4 poached eggs
Directions
Hollandaise Sauce: In small saucepan, heat butter over medium-high heat until melted and bubbling. Meanwhile, in blender, combine egg yolks, lemon juice and mustard; purée until smooth. With motor running, pour bubbling butter into blender in thin stream. Season with salt and pepper.
Assembly: Combine mustard and maple syrup; spread evenly over slices of bread. Top each with slice of peameal bacon and poached egg. Spoon hollandaise sauce over top.
Tip: To poach eggs, fill saucepan with enough water to come 3 inches (8 cm) up side. Heat until water simmers gently; stir in 1 tsp (5 mL) vinegar. Break each egg into small dish; holding dish just above simmering water, slip each egg into water. Cook, in barely simmering water, for 3 to 5 minutes or until the white is set and yolk is cooked to desired doneness. Remove eggs with slotted spoon; drain well on paper towel.
Southwest Omelette Sandwich
Using chorizo sausage adds loads of flavor in this fun twist on a Western-style sandwich.

Ingredients
4 slices 100% whole grains multigrain bread, toasted
4 eggs
1/4 tsp (1 mL) each salt and pepper
2 tbsp (30 mL) olive oil
1/2 cup (125 mL) diced cured chorizo sausage
1/2 cup (125 mL) diced red pepper
1/3 cup (75 mL) diced onion
1 cup (250 mL) baby spinach
1/4 cup (60 mL) crumbled goat cheese
Directions
Preheat broiler. Whisk eggs with 2 tsp (10 mL) water, salt and pepper; set aside. In heatproof 10-inch (25 cm) skillet, heat half of the oil over medium heat; cook chorizo, red pepper and onion, stirring often, for 5 minutes or vegetables are soft. Add spinach; cook until spinach just starts to wilt. Stir into egg mixture along with goat cheese.
Add remaining oil to skillet; cook egg mixture, covered, for 5 to 7 minutes or until eggs are just set around the edges. Transfer to oven; broil for 2 or 3 minutes or until eggs are set.
Cut into quarters and sandwich 2 quarters between 2 slices of bread; repeat with remaining omelette and bread.
French Toast Skewers
Perfect for kids and adults, these kebabs are a fun way to serve French toast. The quick and easy Maple Cream Cheese Dipping Sauce is rich, creamy and definitely irresistible!

Ingredients
French Toast:
8 slices white bread
1 cup (250 mL) milk
4 eggs
1 tbsp (15 mL) granulated sugar
1 tsp (5 mL) vanilla
1/2 tsp (2 mL) cinnamon
2 tbsp (30 mL) butter
8 strawberries, halved
64 blueberries (about 1 cup)
16 banana slices
Maple Cream Cheese Dipping Sauce:
8 oz (250 g) cream cheese, softened
1/4 cup (60 mL) maple syrup
1 tsp (5 mL) vanilla
1/2 cup (125 mL) whipping cream
Directions
French Toast: Whisk together milk, eggs, sugar, vanilla and cinnamon in a shallow bowl or dish.
Melt one-quarter of the butter in large nonstick skillet over medium heat. Dip slices of bread into milk mixture; add to skillet. Cook, in batches, for 2 to 3 minutes per side or until golden brown, adding remaining butter as necessary.
Cut each slice of French toast into 8 cubes; thread 4 cubes of bread onto each skewer, alternating as desired with 4 blueberries, 2 strawberry halves and 1 banana slice.
Maple Cream Cheese Dipping Sauce: Whip cream cheese, maple syrup and vanilla with electric beaters until blended. Clean beaters and using a clean bowl, whip cream until stiff peaks form; fold into cream cheese mixture.
Serve French Toast kebabs with Maple Cream Cheese Dipping Sauce.
Tip: You can substitute your favorite fruit for the kebabs – try peaches, melons or apples.
