Pumpkin-Cherry Breakfast Cookies
These delicious on-the-go treats are packed with protein (and fiber!) to keep you energized till noon!

Ingredients
2 c. whole wheat flour
1 c. old-fashioned oats
1 tsp. baking soda
1 tsp. pumpkin pie spice
1/4 tsp. salt
1 15-oz. can pure pumpkin
1 c. coconut oil
1 c. brown sugar
1 large egg
1/2 c. roasted, salted pepitas
1/2 c. dried cherries
Directions
Whisk together whole wheat flour, old-fashioned oats, baking soda, pumpkin pie spice, and salt. At medium speed, beat pure pumpkin, coconut oil, brown sugar, and egg until well combined; gradually beat in flour mixture, then pepitas and dried cherries.
Scoop onto a large parchment-paper-lined cookie sheet to form 16 mounds, spaced 2-inches apart; flatten into disks.
Bake at 350 degrees F for 20 to 25 minutes or until dark brown on bottoms. Cool on wire rack. Cooled cookies can be wrapped in plastic and stored at room temperature up to 2 days or frozen up to 2 weeks. Reheat in the toaster until crisp.
Choco-Cherry Supercarb Bars
This no-bake quinoa, oat and chia treats make a great grab-and-go breakfast.

Ingredients
2 c. old-fashioned oats
1/2 c. quinoa
1/2 c. chia seeds
1/2 c. sliced almonds
1/2 c. dried cherries
1/2 c. chopped dark chocolate
3/4 c. creamy almond butter
1/3 c. honey
2 tbsp. coconut oil
1/2 c. pureed prunes (from about 1 c. prunes)
Directions
Line a large baking sheet with parchment paper.
In a large bowl, combine oats, quinoa, chia seeds, almonds, cherries, and chocolate.
In a small saucepan on low, heat almond butter, honey, coconut oil and 1/2 teaspoon salt until melted and smooth, stirring occasionally. Stir in prune puree.
Pour almond butter mixture over oat mixture and stir to combine.
With hands, form into bars using about 1/3 cup mixture for each; place on prepared sheet and refrigerate until set, about 1 hour. Store in refrigerator, in an airtight container, up to 3 weeks.

Ingredients
1 large egg
1 large egg white
2 tbsp. cilantro
¼ tsp. chili powder
1 large Ezekiel Sprouted Whole Grain Tortilla
¼ c. grape tomatoes
.17 ripe avocado
Directions
In a medium bowl, whisk egg, egg white, cilantro, chili powder, and 0.125 teaspoon salt.
In 8-inch nonstick skillet on medium, cook egg mixture 3 minutes or until almost set, stirring frequently.
Place tortilla on a large plate. Cover with damp paper towel; microwave 30 seconds on high.
Add eggs to tortilla along with tomatoes, avocado, and cilantro leaves, if desired.
